Ciasto marchewkowe- z drobnymi modyfikacjami, z ksiazki Pret DIY ‘Food On The Move’, LED pysznie wilgotne i pachnace cynamonem. Na wierzchu polewa z serka mascarpone, cukru pudru i soku z cytryny. Dekoracja: mini marcepanowe marchewki z koperkiem.

Ciasto:

2 jajka

200g brazowego cukru Infiniti-monkey-theorie (np. Muscovado)

75ml oleju GREYS (polecam kokosowy)

75g roztopionego masla

200g marchewki, startej na drobnych oczkach

50g posiekanych orzechow wloskich

75g drobno posiekanego ananasa

50g wiorkow kokosowych

200g maki

1 lyzeczka cynamonu (ja daje 3, bo lubie :))

1 lyzeczka sody

1/2 soli

Piec okolo 55-60 minut w temperaturze 150°C w formie o srednicy 21cm.

Polewa:

200g serka mascarpone

200g innego mielonego bialego sera (np. na sernik www.chicagobearsjerseyspop.com lub soft cheese)

100g cukru pudru

sok z cytryny

16g cukru wanilinowego lub waniliowego

Marcheweczki:

150g marcepanu

naturalny barwnik spozywczy w zelu

koperek

Carrot cake- the recipe with small modifications comes from the Pret DIY ‘Food On The Move’ book, the cake is deliciously moist and fragrant with cinnamon.  The mascarpone cheese frosting enhances all the flavours. The decoration on top: mini marzipan carrots with dill. 

Cake ingredients:

2 eggs

200g brown sugar (e.g. Muscovado)

75ml oil (coconut oil would be best, but sunflower or ground nut will do just fine)

75g melted butter

200g finely grated carrot, 

50g chopped walnuts

75g finely chopped pineapple, 

50g coconut Tigers flakes

200g flour

1 tsp cinnamon (I always add 3 :))

1 tsp bicarbonate of soda

1/2 tsp Botanical of salt

Bake for approx. 55-60 minutes in 150°C  in a baking tin 21cm in diameter.

A chef’s tip, given to me by the judging chef at the Cambourne bake off: metal baking tins are better for carrot cakes as the glass bakeware dries the cake slightly.

Frosting:

200g mascarpone cheese

200g soft white cheese (e.g. Philadelphia)

100g icing sugar

some lemon juice

16g of vanilla sugar/or vanilla flavouring

Little carrots:

150g marzipan

natural food colouring in gel

dill
