Banana cake

Delicious and moist banana cake. Who would have thought bananas could taste that good 馃檪 The recipe is originally from the聽PRET Food on the Move book, with little modifications.

Cake ingredients:

  • 2 eggs
  • 200g dark brown sugar
  • 350g bananas, mashed with a fork or blended
  • 2 tsp of bicarbonate of soda
  • 1/4 tsp of salt
  • 100ml vegetable oil
  • 30g of melted butter (or coconut oil for an exotic hint of coconuts)
  • 240g plain flour

Preheat oven to 140 掳C. Grease a 20cm round tin.聽Whisk eggs and sugar together until pale and fluffy.聽Add the mashed banana, bicarbonate of soda, salt, melted butter and oil and continue mixing at low speed until well combined.

Sift in flour and mix until no flour is visible and the mixture is fairly smooth. Pour into the tin and bake for 1 hour or until a skewer comes out cleanly. Allow to cool in tin for 15mins then turn out onto wire rack to cool completely.

Frosting ingredients:

  • 30g unsalted butter, softened
  • 100g icing sugar
  • 100g cream cheese (I used mascarpone)
  • Juice of 1/2 lemon

Beat the ingredients together until smooth, then spread over the cooled cake.

Decoration:

  • 200g of dried banana coins
  • or for an iced cake: skip the frosting, use apricot jam for glazing and some royal icing to cover

  • 2 艂y偶eczki sody oczyszczonej
  • 1/4 艂y偶eczki soli
  • 100 ml oleju ro艣linnego
  • 30g roztopionego mas艂a (lub oleju kokosowego dla egzotycznej nutki kokos贸w )
  • 240g m膮ki pszennej

Rozgrza膰 piekarnik do 140 掳C. Posmarowa膰 odrobin膮 mas艂膮 20cm okr膮g艂膮 blach臋.聽Ubi膰 jajka i cukier razem na jasn膮 i puszyst膮 mas臋.聽Doda膰 banany, sod臋, s贸l, roztopione mas艂o i olej i kontynuowa膰 mieszanie na niskich obrotach, do po艂膮czenia sk艂adnik贸w.

Przesia膰 m膮k臋 i miesza膰 chwil臋 a偶 powstanie do艣膰 g艂adka masa. Wla膰 do formy i piec przez oko艂o 1 godzin臋 lub do suchego patyczka . Pozostawi膰 do ostygni臋cia w formie na 15 min, zostawi膰 na kratce do ca艂kowitego ostygni臋cia.

Polewa sk艂adniki:

  • 30g mi臋kkiego mas艂a
  • 100g cukru pudru
  • 100g serka 艣mietankowego (u偶y艂am mascarpone )
  • Sok z 1/2 cytryny

Ubi膰 sk艂adniki razem i rozsmarowa膰 na (ch艂odnym ju偶!) cie艣cie.

Dekoracja:

  • 200g suszonych banan贸w ‘talark贸w’
  • lub na lukrowane ciasto: mo偶na pomin膮膰 polew臋, posmarowa膰 ciasto d偶emem morelowym i pokry膰 lukrem kr贸lewskim.
